Peanut Butter Cookies


This is my "go-to" peanut butter cookie recipe. It is an easy, classic recipe.  I was asked to bring two dozen cookies to church, and this is what I made.  Unfortunately I learned the hard way that when asked to bring food somewhere it is not the time to try a new recipe or experiment with ingredients.  


I used to almost always try new recipes when bringing goodies somewhere.  That used to be about the only time I baked, so I looked at it as chance to try something new.  And I actually added quite a few very good recipes to my repertoire.  That all changed a few years ago when I was left digging through my cupboards trying to figure out what to make after a recipe from a magazine flopped.  I can't remember the exact recipe, but I remember it was some type of danish filled with cream cheese and raspberry jam.  The filling spilled out everywhere and was a terrible mess.  Worse than the mess was that I had no back-up plan and only had a few (very early morning) hours to make something else.  So, lesson learned.  Sometimes classic, tried-and-true recipes like this peanut butter cookie recipe are the best.

Peanut Butter Cookies
Classic peanut butter cookies.

Ingredients
  • 1 cup sugar
  • 1 cup brown sugar, packed
  • 1 cup butter, softened
  • 1 cup peanut butter
  • 2 eggs
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt

Instructions
1. Cream together the butter and sugars.2. Add peanut butter and eggs then mix until well combined.3. In a separate bowl combine flour, baking soda, baking powder, and salt.4. Gradually stir dry ingredients into batter.5. Refrigerate dough for 2 - 3 hours.6. Shape dough into walnut-sized balls and place on cookie sheet about three inches apart.7. Flatten dough into a crisscross pattern with a greased fork dipped in flour or sugar.8. Bake in 350°F oven for about 10 minutes or until cookies are lightly browned. 9. Cool slightly on cookie sheet for about a minute before transferring to rack to cool completely.

  9. These cookies are perfectly executed with their criss-cross peanut shell-like pattern and precise round shape. I can tell the recipe is spot on by the ingredients and I'll be baking up some of these for sure. Congratulations on receiving the awards!

I have never participated in the "Award" process because of the "blog hop" attachments..I understand the requirements..I just always chose not to pass on "chain" type of things. Your Post was Great!     @S. I usually don't use natural peanut butter for these, however I did for this batch! I thought I had some regular, but all I had was Skippy Natural. It worked fine with that. But the Skippy Natural is different than many other natural PB's. It doesn't require stirring like most do.
