
Some days you need chocolate. It’s just a fact. And on those days when you need a little chocolate, what’s better than a small batch of brownies? My son recently finished Family and Consumer Science (Home Economics) in school so he was eager to help bake a treat. We decided to make these quick and easy brownies today. I prefer fudge brownies to cake brownies, so this is one of my favorite brownie recipes to make. Although you could easily double this recipe, I am glad we only made an 8x8 pan. Having more would have been way too tempting! We are a family of four, so I cut 12 bars and let everyone know that they can only have three. That way no one cheats!

Update--OK, my son just corrected me on my post. He said, "Mom, we each get four brownies. Four rows of four is 16, not 12!" He is obviously better at the math stuff than I am! So the good news is that I have two of my brownies left, not one. :)

Fudge Brownies
A simple, small batch fudge brownie recipe.
Ingredients
- 1/2 cup butter
- 2 ounces unsweetened chocolate
- 2 eggs
- 1 cup sugar
- 1 teaspoon vanilla
- 3/4 cup all-purpose flour
- 1/2 cup chopped nuts (optional)
Instructions
1. Preheat oven to 350° and spray an 8x8 inch baking pan with cooking spray.2. In a glass bowl heat the butter and chocolate in the microwave on low power until the butter melts and the chocolate begins to soften.3. Quickly stir the melted butter and chocolate until the chocolate is completely melted.4. Stir in eggs, sugar, and vanilla until just combined.5. Stir in the flour and nuts, if desired. 6. Spread batter into prepared pan and bake at 350°F for about 30 minutes.7. Cool completely before cutting into bars.

ReplyDeleteI didn't use an electric mixer because you only need to mix it until the ingredients are combined. Just stir it until the liquid and dry ingredients are combined--probably 30 seconds - 1 minute.
