
Back in college my roommate and best friend Mary worked as a waitress at a restaurant called Pannekoeken. The specialty of the restaurant was of course the Dutch pancake, the pannekoeken, which was served in a special way. Because this pancake is best served hot out of the oven, the waitresses were to quickly take the pannekoeken to the table as soon as they were ready. They were to literally run it right out to the table! And to make sure no one was in the way they yelled, “Pannekoeken!” as they ran. Of course some waitresses took the pannekoeken deliveries more seriously than others. And I have to say Mary delivered her pannekoekens with real style. On one occasion Mary’s boyfriend (now her husband) and I decided to pay her a visit while she was working and order pannekoeken. I will never forget Mary running the pannekoeken out to our table! Unfortunately the Pannekoeken restaurant franchise is long gone, but I understand there are still some independent Pannekoeken Restaurants around.

I have no idea if this recipe is authentic Dutch pannekoeken or not, but it is easy to make and tastes great. It is also fun to watch it puff up as it bakes. I have only made pannekoeken a few of times, but it has never puffed up quite as high as it did this time. Pannekoeken can be served with all different kinds of toppings—apples, berries, bacon, syrup, or just sprinkled with powdered sugar. I decided to make mine with apple topping. Pannekoeken! Now I am going to grab a cup of coffee and enjoy my pannekoeken as I reminisce about my college days . . .

Apple Pannekoeken (Dutch Pancake)
A Dutch pancake that puffs as it bakes.
Ingredients
- 2 tablespoons butter
- 3 eggs
- 1/8 teaspoon salt
- 1/2 cup milk
- 1/2 cup all-purpose flour
- powdered sugar (optional)
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup brown sugar, packed
- 2 medium cooking apples, peeled, cored, and thinly sliced
- 1/4 cup butter
Instructions
1. Make sure your oven rack is in the middle of your oven, then put butter into an oven-safe skillet or pie plate, place into the oven, and preheat 425°F.2. While waiting for the butter to melt, prepare your batter by beating the eggs in a large bowl; add the salt, milk, and flour and continue to beat until smooth.3. When butter is melted, remove skillet or pie plate and tilt to coat with butter, then carefully pour in the egg mixture.4. Bake for about 15-18 minutes without opening the oven door. (The pannekoeken will puff as it bakes and is ready when it is browned and crisp around the edges.)5. To make the apple topping, combine the brown sugar, cinnamon, and nutmeg in a bowl.6. Add the apples to the bowl and mix gently to coat; set aside. 7. In a large saucepan, melt the butter over low heat.8. Add the apple mixture and cook over medium heat until the apples are tender.9. Carefully spoon apple topping over hot pannekoeken, sprinkle with powdered sugar if desired, cut into wedges, and serve immediately. (Don't forget to yell "Pannekoeken!")

ReplyDeletethere is alot of them still around in minnesota saint louis park is the one i go to every sunday for breakfast. they still call out pannekoeken in delivery. they however do not taste the way they used to this recipe is much closer thank you very much for bringing me back!!!!
ReplyDeleteWhen my mother and I visited my son in Rochester MN we went to breakfast and ordered these "Dutch Babies". The waitresses did indeed announce delivery and ran them to the table. They were delicious. Now that we are back in Texas we are going to bake our own! We will draw straws to see who gets to "announce delivery"!

When growing up in MN we too would go to the Pannekoeken Huis for sunday breakfast. This recipe yielded a product pretty close to what I remembered having as a child. Thanks for the great recipe!

ReplyDeleteThis is an old post but in case anyone is still listening....I use to love going to Pannekoeken for breakfast, the hungry Dutchman breakfast! I also use to pick up the huge muffins for my wife. Now I'm on the other side of the country and I make these for breakfast out here, strawberry banana Pannekoeken is fantastic to!
