One of the nice things about blogging your favorite recipes is that it makes it easy to find them when you want to make them. After spending an entire morning searching for this Lemon Cream Cheese Bar recipe, I knew it was time to add it to my blog. When I am asked to “bring bars” for something, I often make these bars, and I am almost always asked by at least one person for the recipe. If I making these to have at home, I usually use a 7x11 inch pan because I prefer thicker bars. On the other hand, if I am making them to bring somewhere, I often use a 9x13 inch pan. That way I can cut more bars and serve more people.

Lemon Cream Cheese Bars
An easy lemon cream cheese bar recipe that uses a cake mix.
- 1 lemon or yellow cake mix
- 2 eggs, used separately
- 1/2 cup oil
- 1 8 oz. pkg. cream cheese, softened
- 1/3 cup sugar
- 1 teaspoon lemon juice
- 1 teaspoon lemon zest
1. Mix dry cake mix, 1 egg, and oil until crumbly; reserve one cup.2. Press remaining mixture lightly into an ungreased 9x13 inch or 7x11 inch pan. 3. Bake for 15 minutes at 350°F.4. Beat cream cheese, 1 egg, sugar, lemon juice, and lemon zest until smooth.5. Spread over baked layer and then sprinkle reserved crumb mixture over the top.6. Bake for an additional 15-18 minutes.7. Cool completely before cutting into bars.
