Cranberry White Chocolate Chip cookies
Tart cranberries and sweet white chocolate chips--the perfect cookie for the holidays.
Ingredients
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1/2 cup brown sugar, packed
- 1 egg
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1 cup dried cranberries
- 1 cup white chocolate or vanilla baking chips
Instructions
1. In a large bowl cream together the butter and sugars.2. Beat in the eggs and vanilla.3. In a separate bowl, combine the flour and baking soda.4. Gradually add the dry ingredients to the wet ingredients and mix well.5. Fold in the dried cranberries and baking chips.6. Drop by tablespoonfuls onto an ungreased baking sheet leaving about 2 inches in between.7. Bake at 375°F for 8 - 10 minutes or until cookies are lightly browned.8. Allow cookies to cool on the baking sheet for about 1 minute, then remove from pan to a wire rack and allow to cool completely.

We have our traditional cookies that we bake - the holidays wouldn't be complete without them! - but there's always room for new recipes. Love the tartness of the cranberries with the white chocolate. Look forward to trying these!

ReplyDeleteThanks for the recipe. I've been meaning to find a white chocolate chip cranberry pistachio cookie recipe and nothing really came up but this is perfect! I can just add the pistachios at the end, giving me a perfectly red and green Christmas cookie without any artificial food coloring.
ReplyDeleteThese are delicious! I've made them 4 times already over the past 2 weeks to take to various holiday functions. Someone who posted earlier mentioned using orange in their recipe, so I used orange flavored cranberries and the cookies are even more delicious! In one batch I also substituted brandy for the vanilla.... tasty tasty!

These are the best cookies ever! A nice change from regular chocolate chip cookies. I like to add pecans or macadamia nuts for extra crunch. You could also do dried apricots for a change of pace.
ReplyDeleteYou can also add some chopped pecans or macadamia nuts as a variation. I think dried apricots would work well if you don't want to use the cranberries.
ReplyDeleteLOVE these cookies! I made them twice; once with salted butter and anotehr time with unsalted butter. One turned out better than the other but I forgot which butter I used! What type of butter does this recipe call for? Thanks!
ReplyDeleteGlad you enjoyed the recipe! You can use either kind of butter. I usually use unsalted if a recipe already has salt in it and salted if a recipe doesn't have any other salt added. So in these I would use salted.

DeleteI made this today & they were a bit too sweet for my liking (& I have a sweet tooth!). The texture was nice though & I'd make it again, but I'll cut down on the sugar by about 1/8 cup cos the white chocolate adds to the sweetness.
