
I made these Mint Cream Cheese Brownie Bites to bring to a Christmas party. I had planned on making chocolate orange cookies, but when I went to make them the oranges were gone! If you follow my blog, this may sound familiar. I wasn’t going to post these brownie bites since I used a mix for the brownies, but the mint cream cheese frosting was too delicious not to share (and record for myself for later use). And if you don’t want to use a mix, you could of course use your favorite brownie recipe.
I used a family size brownie mix which made 72 brownie bites. Since I didn’t need to bring all 72 brownies to the party, my plan was to make a small batch of frosting with half a block of cream cheese. I planned on freezing the brownies I didn’t need and then making more frosting for those closer to Christmas. As it turned out, the small batch of frosting filled the 72 brownies exactly. And I mean exactly—I seriously could not have filled one more. I am including the small batch recipe, but if you want lots and lots of frosting on your brownies or want leftover frosting (not necessarily a bad thing!) by all means double the recipe.

Mint Cream Cheese Brownie Bites
Mini brownies topped with mint-flavored cream cheese.
Ingredients
- favorite brownie recipe or brownie mix plus ingredients to prepare brownies
- 4 ounces cream cheese, softened
- 2 tablespoons butter, softened
- 1 teaspoon peppermint extract
- 1 1/2 cups confectioner's sugar
- green food coloring
Instructions
1. Preheat oven to 350°F and prepare mini-muffin pan by lightly spraying with cooking spray.2. Prepare brownie recipe or mix as per instructions.3. Fill each well of mini-muffin pan half full with batter using a small cookie scoop and bake for 10-15 minutes.4. While brownies are still warm and in the pan, gently press centers to create a well, then allow to cool slightly in the pan.5. To remove brownies from the pan, gently twist and lift; allow brownies to cool completely.6. Make frosting by beating together the cream cheese, butter, and peppermint extract; gradually add the confectioner's sugar and beat until smooth. Gradually add green food coloring until desired color is achieved.7. Fill pastry bag fitted with desired tip (I used Wilton 1M) with frosting and pipe into the center of each brownie bite. If frosting becomes too soft, refrigerate for awhile.8. Serve immediately or refrigerate.

ReplyDeleteI love the bite size brownies - for a party or not. I tend to nibble nibble nibble though. I think I end up eating the equivalent to more than one full size brownie. I agree with Damn Delicious...red sprinkles would only bump up the Christmas theme. Great recipe.

I am kicking myself for not reading this sooner. I made brownie bites yesterday for a party I'm having this weekend. What I didn't do was make an indent for the filling. Aaarrgghh! Your mint cream cheese filling would be perfect. Guess it's time for Plan B, as soon as I think of it!
