
Ginger Creams bring back lots of memories for me. Memories from long, long ago! These fluffy ginger cakes with creamy white icing are one of the cookies that my mom made for me to take to kindergarten to share with my class. I remember counting down the days on the mimeographed cookie calendar until it was my very first “cookie day”. Carefully my mom and I packed the ginger cream cookies into a green Tupperware container, and I proudly brought them in to my teacher. At snack time I took the cookies around to each student. Of course we learned important lessons like “the one you touch is the one you take” and to always say “thank you” to the person who brought cookies.

Ginger Cream Cookies
Fluffy ginger cookies topped with creamy white icing.
Ingredients
- 1/4 cup butter, softened
- 1/2 cup sugar
- 1 egg
- 1/2 cup molasses
- 1 teaspoon baking soda
- 1/2 cup hot water
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon ginger
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cloves
- 1/2 teaspoon cinnamon
- 3/4 cup confectioners' sugar
- 1/4 teaspoon vanilla
- 1-2 tablespoons cream
Instructions
1. Mix together the butter, sugar, egg, and molasses.2. Dissolve soda in the hot water and then stir into mixture.3. Stir in flour, salt, ginger, nutmeg, cloves, and cinnamon.4. Chill dough for about an hour. 5. Preheat oven to 400°F and lightly grease a baking sheet.6. Drop dough by rounded teaspoonfuls onto baking sheet about 2 inches apart.7. In 400°F oven, bake for 7 - 8 minutes or until when touched with finger almost no imprint remains.8. Make icing by combining the confectioners' sugar, vanilla, and enough cream to make spreadable.9. Frost cookies as soon as they are cool enough to handle, but still warm.

ReplyDeleteI didn't have cookies and milk everyday, but there was a period of time, when mum would pick me up from kindergarden take me to the closest 7/11 buy me a small carton of milk and a small packet of chips :) fond memories ~

Just looking at the ingredients, I can see that these cookies are totally scrumptious. I don't remember having any treats in kindergarten. We all brought our own lunchs--I remember--but there wasn't a mom like yours who sent treats to school. What a wonderful memory. Even though we're all so busy with work, I think it important to share home-cooked treats. I'll be everyone who was in kindergarten with you remembers those cookies!

ReplyDeleteI can't remember if we had cookies daily in Kindergarten - that was a long time ago. I just remember taking out our mat and having to pretend like we were sleeping. We had back then nap time. Wow how things have changed. Now they have kindergarten all day. It's fun going back down memory lane.
These have a similar flavor to gingersnaps, but have a different texture. These are more like little cakes, not quite as chewy as gingersnaps.
DeleteWe didn't have mats, but I think we had to put our heads down after snack time and "rest". I remember it being very uncomfortable to keep my head down for so long!
I am a big fan of ginger cookies...could eat a dozen at one go!

I remember having these ginger pigs growing up and they were these big thick soft ginger cookies and this is the closest recipe I've seen that might possibly work. ReplyDeleteI sent you an email--Even though the cookie dough is chilled, it is still pretty soft and sticky, so wouldn't work for rolling. I do think you could use fresh ginger instead of ground ginger just fine.

I didn't have homemade cookies:( but I went to mrs. Mouw's country kindergarten and we had pony rides and horse cart rides. Those were pretty fun activities packed in a 1/2 day!

(we didn't have cookies every day, but we only had half day kindergarten. everyone was allowed to bring a treat to share on their birthday, though - up through 5th grade!)
Yes--you add the baking soda to the hot water and then pour it into the batter. It kind of fizzes and foams. I have not seen many recipes that do this, but one of my grandma's recipes says to dissolve the baking soda in boiling coffee. We didn't have cookies every day in kindergarten, but I'm pretty sure I wouldn't have complained if we did. :) I've never tried ginger cream cookies but I think I will be making them soon. They sound wonderful.

ReplyDeleteSo yummy! Perfect for kindie-garden consumption! We had them everyday too. It wasn't a bad thing back then though because we still had playtime where the teachers tossed us outside and forced us to run it all off! At least...that's how it was in Oklahoma :)

ReplyDeleteWe had a snack every day in Kindergarten, which was usually cookies (store bought or homemade) and milk. Sometimes it was raisins or graham crackers though. My daughter did not have snack time at all when she was in Kindergarten last year. She has a snack time this year now that she is in first grade. However, each kid has to bring a snack for themselves, and the snack must be a fruit or a veggie.

ReplyDeleteWhat a sweet memory! We didn't have kindergarten, and I don't even think we had snacks in first grade. I do let the children in my class now bring snacks, but I encourage them to bring fruit or veggies. Cookies we save for special occasions. Ginger cookies are my favorites, so I would have loved the days that you brought them! :)
