
I love dark chocolate! Give me a bag of Hershey’s Miniatures and I pass on the Mr. Goodbars and Krackels and go right for the Special Dark Chocolate Bars. So when I saw Hershey’s Special Dark Cocoa at the grocery store, I wondered why I had never tried this blend of natural and Dutch-processed cocoas. I checked out recipes on Hershey’s website and decided to use my new cocoa in this brownie recipe.

The process for making these brownies is different than with other brownies I have made. The egg whites are beaten separately and then folded into the batter. These brownies are intensely dark in color and rich in flavor. If you like Hershey’s Special Dark Chocolate Bars, you will probably enjoy these brownies. Since my husband and kids are not huge fans of dark chocolate, I thought maybe I would have the entire pan for myself. No such luck. They thought they were pretty good but still prefer our favorite Fudge Brownies.

Special Dark Cocoa
Truffle Brownies
Intensely dark and rich truffle brownies made with Hershey's
Special Dark Cocoa.
Ingredients
- 1 1/4 cups butter
- 3/4 cup Hershey's Special Dark Cocoa
- 1 cup plus 1 tablespoon sugar, divided
- 3 tablespoons all-purpose flour
- 2 teaspoons vanilla
- 4 eggs, separated
- powdered sugar, optional
Instructions
1. Preheat oven to 425°F and grease the bottom of a 9-inch square baking
pan.2. Melt butter over low heat; add cocoa and 1 cup sugar and stir well.3. Remove from heat and cool about 5 minutes.4. Stir in flour and
vanilla; add egg yolks one at a time, beating well after each.5. In a separate bowl, beat egg
whites with 1 tablespoon sugar until soft peaks form.6. Gently fold egg whites into the
chocolate mixture by bringing batter from bottom of bowl over egg whites until combined.7.
Spoon batter into prepared pan and bake for 18 to 20 minutes or until the edges are firm and center is slightly soft.
8. Cool brownies completely and then refrigerate for 4 hours.9. Cut brownies while cold then let stand at room temperature for about 15 minutes before serving; dust
with powdered sugar if desired.

These are incredible, Jill...I'm a serious fan of dark chocolate myself! Just the name makes me crave one! I'm not sure I've seen Hershey's dark chocolate cocoa, but I'll have to look for it so I can make these brownies! Thanks!

These are definitely not cakey. They are more fudgy than any brownie I have ever had. They really are the same texture as truffles.
